Vinification Process
The carefully harvested fruit is gently crushed and cold-settled for two days before being racked and fermented. This process leaves 5g/litre of residual sugar, enhancing the wine’s texture and weight. The Sauvignon Blanc then matures gracefully for three months on lees, adding complexity and depth before bottling.
