Sourced from certified organic vineyards, including 42% from the renowned Om Santi vineyard, with the remainder from Pinnacles and Woolshed vineyards, this vintage is a true reflection of sustainable winemaking. After gentle pressing and overnight cold settling, the juice is fermented in stainless steel with selected cultured yeasts. The ferment is stopped at 5.2g/L of residual sugar to beautifully balance the wine's natural acidity.
Aged on lees for two months, this vegan-friendly Riesling develops enhanced texture and complexity before bottling.

Pale lemon in colour, clear and vibrant. The nose is fragrant and floral, with aromas of fresh lime, Granny Smith apple, and mandarin, layered with hints of jasmine and carnation. On the palate, it opens with a zesty, mouth-watering acidity that is harmonised by ripe citrus and mineral undertones.
