Hand-harvested and whole-bunch pressed, the juice was fermented using indigenous wild yeasts in high-quality French oak barrels, including a portion of new oak. The wine matured for 10 months on lees, with regular stirring to enhance texture and complexity. A partial malolactic fermentation adds a creamy mouthfeel while preserving vibrant acidity.
