Vineyard
Our Albariño grapes are meticulously hand-selected from the estate vineyards in O Rosal and O Salnés, renowned subregions of Rías Baixas. The O Rosal vineyard features nutrient-rich schist soils, while O Salnés is known for its distinctive granite soils. Both terroirs contribute unique mineral and saline notes, enhanced by the cool mesoclimate and ocean proximity, ensuring fresh acidity and complex flavour profiles.
Vinification
Lagar de Cervera is proud to be the first winery in Rías Baixas using advanced optical sorting technology to select only the finest grapes. After gentle pressing in an inert atmosphere to avoid oxidation, fermentation occurs at a controlled 15°C without malolactic conversion, preserving the wine’s vibrant, crisp character. The wine matures on fine lees with regular stirring, developing added complexity and elegance.
