Vineyards
The vineyards of Saint-Romain, elevated at around 410 metres, were promoted from Hautes Côtes de Beaune to their own village appellation in 1947. Nestled in a side valley with varied exposures, the area enjoys cooler temperatures that naturally enhance acidity and aromatic precision. Chalk-limestone soils infuse the wine with a distinctive flinty minerality characteristic of the region.
Vintage
The 2023 vintage in Burgundy delivered both quality and abundance. A mild winter followed by a mixed spring delayed early growth, but warm, stable May weather supported healthy development. Flowering in early June pointed to an early September harvest. Despite intermittent July storms and two isolated hail events, the grapes ripened beautifully during a hot, sunny August. Meticulous sorting ensured pristine fruit quality. The result is a generous, high-quality vintage offering ripe fruit, balanced structure and impressive aromatic concentration.
Vinification
On arrival at the winery, the Chardonnay grapes were whole-bunch pressed and transferred by gravity into 228L French oak barrels (around 20% new) for fermentation using indigenous yeasts. After completing malolactic fermentation, the wine matured for approximately 11 months in the same barrels. It was bottled in November without fining or filtration, preserving purity and texture.

Starting with no family vineyards, David took a leap of faith by securing a bank loan to purchase his first barrels and grapes. Today, he sources premium fruit from around eight respected growers, primarily located in the Côte des Blancs triangle, Meursault, Puligny-Montrachet, and Chassagne-Montrachet, along with hidden gems from lesser-known Burgundy villages that offer outstanding value.
What sets David Moret white Burgundy wines apart is his commitment to quality winemaking and vineyard control. He personally oversees vineyard practices throughout the growing season and determines the optimal harvest date for each parcel. He exclusively purchases whole grape bunches, allowing him to sort fruit meticulously on arrival, now enhanced with state-of-the-art optical sorting technology.
All of David’s white wines from his expressive Bourgogne Aligoté to his prestigious Grand Cru Corton-Charlemagne, are oak-fermented and aged on fine lees for 12 to 18 months. Using lightly toasted Allier oak barrels, he achieves his signature style: toasty, textured white wines with vibrant fruit character and a refined finish. The use of new oak is tailored to each vintage and cuvée, ensuring balance and elegance.
