Vineyards: Old Vines & Black Slate Terroir
The Saperavi grapes for this Reserve originate from vineyards planted in 1984, rooted deep in the black slate soils characteristic of Kindzmarauli and Kvareli. These soils extend up to eight metres below the surface, forcing vines to struggle for water, naturally limiting yields to approximately 3,000 kg per hectare.
This low-yield environment concentrates flavour while preserving freshness. The black slate contributes a distinctive mineral backbone and refined elegance, elevating the wine beyond typical full-bodied Saperavi expressions.
2021 Vintage Conditions in Kakheti
The 2021 growing season in Kakheti began earlier than usual, marked by limited rainfall and above-average temperatures. Crucially, cool nights slowed ripening and preserved natural acidity.
For Bedoba Saperavi Reserve 2021, grapes remained on the vine until late October, undergoing natural passerillage (berry drying). Harvest extended into mid-November, ensuring optimal phenolic maturity and concentration, hallmarks of this structured, age-worthy vintage.
Traditional Qvevri Vinification & Extended Ageing
Bedoba remains committed to Georgia’s 8,000-year-old winemaking heritage through fermentation in traditional qvevri (large clay vessels buried underground).
• Hand-harvested in two passes
• Rigorous sorting upon arrival
• Whole-bunch fermentation in 2,500-litre qvevri
• Indigenous yeasts only
• Cap punched down four times daily initially
• Sealed for natural malolactic fermentation
• Extended skin contact until March
Following fermentation:
• 50% aged 15 months in new qvevri
• 50% aged 10 months in second-fill 500L French oak barrels
• Final blend returned to qvevri for integration
• Bottled December 2022
• Over 12 months bottle ageing before release
This dual maturation balances traditional clay purity with subtle oak structure.

Frequently Asked Questions
Q. What makes Saperavi different from other red grapes?
A. Saperavi is a teinturier grape, meaning both its skin and flesh are deeply pigmented. This results in intensely coloured wines with strong structure and ageing capacity.
Q. What is qvevri winemaking?
A. Qvevri are large clay vessels buried underground for fermentation and ageing, a traditional Georgian method that enhances texture, minerality, and stability without excessive oak influence.
Q. Is Bedoba Saperavi Reserve 2021 suitable for ageing?
A. Yes. Thanks to its concentration, tannin structure, and balanced acidity, it can age gracefully for 10–15 years or more.
Q. How should I serve this wine?
A. Decant for 1–2 hours before serving at 16–18°C (60–65°F) to allow full aromatic development.
Bedoba Saperavi Red Wine – Handcrafted Georgian Wine from Kakheti, Fermented in Qvevri
Discover the rich heritage and bold character of Bedoba Saperavi, a premium Georgian red wine crafted from the country’s indigenous Saperavi grape variety. The name Bedoba means “Day of Luck” in Georgian, a tribute to the winery’s legacy and cultural roots.
Sourced from 30-year-old vines in the Kvareli and Kindzmarauli appellations of Kakheti, Georgia’s most esteemed wine region, Bedoba showcases the intense flavours and deep history of traditional Georgian winemaking. These vineyards lie along the Duruji River Valley at over 400 metres above sea level, with black shale soils and a cool mountain climate that produce wines with fresh acidity and soft, elegant tannins.
The winemaking process blends ancient tradition with modern precision. A portion of the Saperavi grapes is naturally dried on the vine until late autumn, while another is whole-bunch fermented to add layers of spice and savoury depth. Fermentation takes place in both stainless-steel tanks and traditional clay qvevri, before ageing in second- and third-fill American oak barrels and large 5,000-litre wooden vats. The wine then matures in bottle for 12 months, resulting in a silky, balanced texture.
Sustainably farmed and organically cultivated, Bedoba honours centuries of winemaking history. The label features Saint Nina, a revered figure in Georgian Christianity, connecting each bottle to the spiritual heritage of the Konchosvilli family, whose winery cellars date back to 1737.
Perfect for collectors, enthusiasts of natural wines, or anyone seeking authentic Saperavi red wine from Georgia, Bedoba is a bold, expressive wine that speaks of its land and legacy.
