Fermented entirely with naturally occurring yeast, this is an alternative style of Sauvignon Blanc that is both intricate and textural. A delicate combination of musky peach-skin aromatics and gentle citrus-blossom notes – a dash of lime cordial and a hint of saffron. The palate is lusciously herbal, long and refreshing with flavours of white nectarine flesh, dill and hints of fennel. The finish is succulent and crisp with almost a flinty dryness. Fabulous Kiwi Sauvignon from the original winemaker & vineyard manager who put Cloudy Bay on the map. Citrus and mineral flavours, rather than the pungent passion-fruit and gooseberry of many other Kiwi S Blancs. Unlike Cloudy Bay, grapes are hand-picked, then whole-bunch pressed. Yields are low and fermentation is spontaneous, using only the indigenous yeasts - giving it more body and complexity. This is accentuated by maturation over the lees with regular stirring.
